What’s the difference between “single pass” and “double pass” dough sheeters?

Single pass sheeters send the dough through one set of rollers. They are typically less expensive to purchase, but it may take more passes through the machine to reach the desired dough thickness. Double pass sheeters send the dough through two sets of rollers. This allows the dough to reach the desired thickness with fewer passes through the machine and saving on labor.

Can I use cold dough with my sheeter?

Dough should be room temperature before passing though the dough sheeter. Cold dough it generally too stiff and hard on the machine. Causing it to wear out the rollers and gears much quicker.

Can dough sheeters be used with gluten free dough?

It is not recommended to use dough sheeters for gluten free dough because of they hydration level is too high. Having a higher hydration level makes it difficult to achieve good results. Starch based flours usually have a high water absorption capacity, which is what most of gluten free dough it made from.

Can you put fondant though a dough sheeter?

It is not recommended to pass fondant through dough sheeters as fondant is generally too sticky for the machine. You would need to use a sheeter made specifically for fondant.

How do you Remove & Clean the dough scrapers?

To Remove & Clean the Upper V-Shaped Scrapers:

Pull the Chrome Rod # 59 outwards and the Scraper should drop down.
Make sure to hold the Scraper so that when it drops down you do not damage the Teflon Edge on the Scraper.
Wipe down the Scraper and apply a light coating of either Vegetable/ Cooking/ Mineral Oil to the Scraper.
While you have Scraper off you could apply a thin coat of Oil to Upper Rollers, this will prevent the Scrappers from being dry.
Dry Scrapers can cause loud squeaking squawking noises.

NOTE: Do not pull Chrome Rod out too far as this will stretch the Tension Springs, just enough so the scraper can be removed.

When finished, pull the Chrome Rod outwards again and reinstall the Upper Scrapers.

To Remove & Clean the Lower Scrapers:

Lift the Outfeed Tables all the way up
Underneath (on each side) and you will see a Key Ring with a Spring attached which holds the Lower Scraper in place.
Pull Down Slightly on the Ring (1/4″) and slip off over Tab on Bar.

Note: Do Not Pull Down Too Far as this will Stretch and weaken the Spring.

Lower Outfeed Tables, reach under where Lower Scrapper is and Push Upwards and Scrapper should come out of Mounting Brackets.
Wipe down the same as Upper Scrappers and wipe down with a thin film of Oil as specified above.
Reinstall Scrappers making sure to install in Round Notched Mounting Brackets.
Grab rings from underneath the Sheeter and reinstall on the Metal Tabs
The loop on the Spring itself go on over the Tabs, not on the Key Ring.
